Oh, and Chinese food we eat in the UK, is nothing like what is found in China or HK.
As for very hot / spicy food (whch I am not fond of), one of the best things to get rid of the burning, is coconut milk/juice, ( known as Buko in the Philippines.)
Why don't they just eat the breast, leg and possibly the wings...? Those are the only bits worth having aren't they?

Well in China, chicken breast is considered "dead meat", meaning that part of the meat is not "exercised" by the chicken, kind of just being there, whilst the other parts - neck, wings, feet... are regarded as "flexible meat" and considered more tasty. I'm not keen on chicken neck and feet but I do prefer wings than breast and drumsticks. In England I can get a pack of 12 chicken wings for £1.99, way cheaper than breast fillet and drumsticks. In China it's the other way around, wings are more expensive than breasts.
